I just found this great link from a guy who zoomed around the backroads of Nicaragua for a few weeks.  Great photos too.  Check it out. 

Exploring Nicaragua by motorcycle

Central America overall I'd say is a great place for this.  It certainly helps if you speak some Spanish and have some good maps and good weather, of course.  But the motorcycle isn't too expensive or difficult to repair and can go pretty much everywhere.  The traffic outside the main cities is low.  It's safe to visit, as long as you've got street smarts, don't ride at night, etc.
