That is a great picture of a very yummy subject. The Nicaraguans can make some great tamales also. I was San Juan del Norte at the Caribbean mouth of the Rio San Juan and the locals made up a bunch of tamales that were different from any I'd ever seen. They made a large lump of the masa, added some seasonings, then put a chicken breast on top. They then wrapped the whole thing, without covering the chicken breast with masa, in a banana leaf. They served me two and I couldn't finish one they were so huge.

So pretty, too. What kind of string is that? Most of the tamales I see in Honduras are not tied or are tied with a banana leaf vein.
